Your New Favourite Quick and Easy Healthy Recipe: Florence Pugh’s Courgetti

Looking for a quick and easy recipe to try this weekend? In her latest Cooking with Flo Instagram stories segment, actress (and Instagram chef) Florence Pugh walks her followers through the steps of making a healthy courgetti. What exactly is courgetti you ask? It’s basically an all vegetable “pasta” dish. Typically zucchini is used in the dish instead of pasta. Which is great for people (like myself) who have a little trouble getting their daily recommended intake of vegetables. This recipe is not only good for you, but it’s also easy to make and only takes about 20 minutes.

Ingredients: Serves Two

  • 4 Medium Tomatoes
  • 1 Lemon
  • 3 Large Zucchinis
  • 1 tsp chilli powder
  • 1/2 red onion
  • 1 large bell pepper
  • 4 cloves of garlic
  • 2 Tbsp butter
  • 1/4 tsp salt
  • Pepper (to taste) 
  • Veggetti vegetable spiralizer  

Directions: 

  1. Place frying pan on burner set to medium heat.
  2. Add butter to frying pan.
  3. Chop garlic cloves and add to frying pan once butter has melted.
  4. Cook garlic until slightly translucent.
  5. Add diced tomatoes to frying pan.
  6. Thinly slice red onions and add to pan.
  7. Chop bell pepper to suit your preference (I chose to thinly slice mine) and add to pan.
  8. Add juice from half a lemon, chilli powder, salt and pepper. 
  9. Cook ingredients for 10 minutes, stirring occasionally. 
  10. Using your appliance of choice, spiral your Zucchini thick spirals. 
  11.  Add Zucchini to pan and cover with sauce mixture.
  12. Cook for 5-10 minutes depending on how soft you want your vegetables to be and serve!
